Dinner

Wilson being in this body cast was pretty much the best thing to happen for us as far as eating out goes. Taking Wilson places has become quite the chore, so we just stay home most of the time. I also started doing Bountiful Basktets again, and now I have two 5 pound bags of potatoes that I didn't know what to do with. Sooooooooooo, I made gnocchi!!





It was a really long process, and actually didn't take as many potatoes as I thought it would, but it was pretty good when I finally sat down to eat it. I even mixed in some greek yogurt to the spaghetti sauce for some protein. 





What are some other ideas for these potatoes? I'm determined not to let these go bad like I have the last 5 (or so) bags I have bought before. Ideas???????

I don't know if you've ever tried to freeze mashed potatoes. If you freeze them in a big container it doesn't work at all. However, I make a big batch of mashed potatoes and then I scoop them onto a cookie sheet with parchment paper using a small cookie scoop. Then freeze them for about 20 minutes until they are nice and firm. Then you can dump them all into a big ziploc and anytime you want some potatoes you can just pull out as many little scoops as you need. Put them in a bowl with a few teaspoons of milk and microwave them for about 2 minutes (stop and stir every 30 seconds to get the best results). This works great for us, especially when I am cooking food for Roy to eat while I am out of town.

Sorry. We no longer eat any white potatoes...so my advice is to throw them away... SNAP :o) But I will go get those Quinoa recipes and be helpful for once.
